The Best Gluten Free Chocolate chip cookie

Ingredients

4 cups Almond Flour

1/2 cup melted coconut oil or butter (both taste great)

1/2 cup pure maple syrup or honey

1/2 tsp salt

1 tsp baking soda

1 cup Sante Guittard Chocolate chips or Dark Chocolate Chips

1 Cup Coarsely chopped Walnuts (option to Omit or add Dried Cranberries)

Directions

  1. Heat Oven to 350 Degrees

  2. Mix all dry ingredients together.

  3. Melt Coconut Oil or Butter add to dry mixture

  4. Add the remaining wet ingredients to the batter

  5. Combine well. Once batter is well mixed add the chocolate chips and nuts.

  6. Line a baking sheet with parchment paper

  7. form cookies into balls and smash down to cookie shape. They will not spread.

  8. Bake 8-10 minutes. They will still be soft. You will know they are done because they are slightly beginning to brown on edges.

  9. Let them cool before eating. This is important because they will crumble and fall apart if not given a few minutes to set. Trust me- I have attempted this.

  10. This Recipe makes approximately 2 dozen cookies. I recommend doubling it and freezing them. They freeze great.
